To her left, Monica, the wife of our vice president Paolo Gobbi<\/figcaption><\/figure>\n<p>With the holidays coming up, we&#8217;ve thought of asking our talented <strong>Brunella<\/strong>, who warms us with her typical dishes, especially at harvest time, when we have lunch all together, or on special occasions, to tell us about Christmas in\u00a0Maremma and festive traditions.<\/p>\n<p>And right while we&#8217;re chatting, Brunella is at work in the Vignaioli&#8217;s kitchen, rolling out the<em>\u00a0schiacciata<\/em>\u00a0(a local <em>focaccia<\/em>) for a school visiting us, using a (label-less) bottle as a rolling pin.<\/p>\n<p>\u00abMy mother would call it the Eve of the seven dinner\u00bb, starts \u00a0Brunella, \u00abbecause we would prepare seven course\u00bb. It was a \u00ablight\u00bb dinner, \u00abdi magro\u00bb, thus without meat, so even though there was plenty of food, the ingredients were simple.\u00a0Brunella stops a few moments to remember, then she gets back to work and continues: \u00abWe would start with\u00a0<strong>crostini (toasted bread) with cauliflower<\/strong>, then there was \u00a0<strong>pasta and chickpeas<\/strong>, and then <strong>tagliatelle with walnuts, sugar and cinnamon<\/strong>\u00bb.<\/p>\n<p>The latter is a Christmas dish that has very ancient origins, in fact they date back to the Etruscans and Romans &#8211;\u00a0after all, it is no surprise since\u00a0these two people had an essential role for\u00a0\u00a0<strong>Maremma<\/strong>. This should refer to the ancient\u00a0pagan feast of Saturn\u00a0which was celebrated from December 17th till December 23rd, and then, with the arrival of Christianity, it was turned into something Christian.<\/p>\n<p>\u00abThen there was salted codfish with chickpeas, then&#8230;\u00bb Brunella stops again. \u00abThen I don&#8217;t remember&#8230; You know, today in fact we don&#8217;t prepare all these courses together, in fact\u00bb, she confesses.<\/p>\n<p>This was Christmas Eve, as Brunella&#8217;s mother would prepare it, something which she now continues with her family.<\/p>\n<p>Christmas lunch followed &#8211; and follows &#8211; all the criteria of a festive meal. After Christmas eve came abundance, with starters made with\u00a0<strong>crostini<\/strong>\u00a0and <strong>cured meat<\/strong>, <strong>broth made with hens or beef\u00a0<\/strong>\u00a0\u2013 the real one! \u2013 with\u00a0<strong>cappelletti<\/strong>, <strong>lasagne<\/strong>, <strong>casserole tins of pasta<\/strong>. \u00abI can&#8217;t recall recipes you would only make on Christmas day. Then of course each family has its own traditions\u00bb, says\u00a0Brunella.<\/p>\n<p>As we chat,\u00a0<strong>Leo<\/strong> \u2013 whom you can find in our shop \u2013 and\u00a0<strong>Lamberto<\/strong> \u2013 who is in charge of the administration \u2013 also arrive in the kitchen and illustrate all the\u00a0<strong>Christmas cakes<\/strong>, shared with the tradition of Maremma and Tuscany in general. There are Florentine\u00a0<strong>cantucci<\/strong>, but also made with\u00a0<strong>Morellino<\/strong> \u2013 of course! \u2013 and also <strong>cavallucci<\/strong>, made with candied fruit, hazelnuts and almonds,\u00a0<strong>ricciarelli<\/strong>\u00a0and\u00a0<strong>panforte<\/strong>, and also a <strong>tart with\u00a0ricotta<\/strong>,\u00a0<strong>zuppa inglese<\/strong>\u00a0and <strong>dates with<\/strong><strong>\u00a0mascarpone and walnuts<\/strong>.<\/p>\n<p>One gets hungry just by listening to them and their stories about Christmas in Maremma!<\/p>\n<p>\u00abThere were also\u00a0<strong>melatelle<\/strong>, made with honey\u00bb, adds Lamberto, in the end. A cake made for Befana (6th of January), typical of\u00a0<strong>Buriano<\/strong> (<a href=\"http:\/\/incucina-nicorobi.blogspot.it\/2012\/11\/melatelle-di-buriano.html\" target=\"_blank\">here&#8217;s<\/a>\u00a0the recipe). \u00a0And mentioning the Epiphany, Leo finally recalls:<\/p>\n<p>\u00abIt was the Befana who would bring us presents. We would put the letter to Santa Claus between\u00a0our dad&#8217;s first and second plate, and every year he would start the same funny scene: he would sit at the table and when he noticed his dishes were unstable he would wonder why, and then he would find the letter.
